Wellness

A cup of raw kohlrabi has about 36 calories, 84 mg of vitamin C (93% DV) and 0.17 mg of copper (19% DV). That makes it a good source of copper. (USDA) The NIH Office of Dietary Supplements says the body needs vitamin C to make collagen, which helps wounds heal, and that vitamin C improves absorption of iron from plant foods and helps the immune system work properly. (NIH ODS) NIH ODS also says the body uses copper to make energy, connective tissues and blood vessels. (NIH ODS)

Pick, store and use

  • Store

Refrigerated, it keeps for several weeks, and longer in sealed perforated plastic bags. (MSU Extension)

  • Freeze

Peel off the tough outer layer, then blanch whole 3 minutes or ½-inch cubes 1 minute. MSU doesn't recommend canning kohlrabi. (MSU Extension)
