Wellness
A cup of raw white mushrooms has about 15 calories, plus 0.22 mg of copper (25% DV). (USDA) The NIH Office of Dietary Supplements says the body uses copper to make energy, connective tissues and blood vessels. (NIH ODS) Harvard's Nutrition Source notes that mushrooms grown indoors in the dark, like white button mushrooms, contain little if any vitamin D unless they've been exposed to UV light. (Harvard)
Pick, store and use
- Pick
Choose well-shaped, clean mushrooms. Skip ones with dark spots; they may be old. (MSU Extension)
- Store
Don't wash them until you use them. Keep them in a paper bag or open container in the fridge and use within 2–3 days. (MSU Extension)
- Use
Rinse just before cooking under cold running water, stem down, so water doesn't run under the cap. (MSU Extension)
Where to get it nearby
No farm in our directory lists mushrooms by name yet. Many farm markets carry more than their listing says, so it's worth asking.
